
This is a wonderful recipe! I just made them last night! I doubled the recipe and froze one batch of them for a ready-made healthy breakfast! Yields 18.
Ingredients:
1 1/2 cups of whole wheat flour
1 cup unbleached all purpose flour
2/3 cups of sugar
2 t baking pwdr
3/4 t baking soda
1/2 t cinnamon
1/4 t salt
1 1/2 cups fat free buttermilk (i use fat free milk)
2 lrg eggs (lightly beaten)
1/4 cup butter, melted
2 cups frozen or fresh mixed berries (I used 1 cup of frozen blueberries and 1 cup fresh strawberries, sliced/chopped)
1 t grated lemon zest ( I have made them with and without this)
Instructions:
Preheat oven to 400. Spray 18 muffin cup tin with nonstick spray.
Combine flours,sugar, baking soda, powder, cinnamon and salt in lrg bowl. Combine the milk, eggs and butter in another bowl. Add the milk mix to the flour mix; stir just until blended. Gently fold the berries and lemon zest in.
Spoon the batter into the cups, filling about 2/3 full. Bake about 18-20 min. or until a knife comes out clean.
These are really delicious and are a great source of calcium, fiber and protein. They make for a hearty breakfast....especially good served with a cup of good strong coffee! :)
*Some healthier alternatives to the original recipe are: Use applesauce in place of butter, which I almost always do in recipes; Use honey in place of sugar or half the two; increase your whole wheat flour and decrease your all purpose flour.
