
Ingredients:
1lb lean ground turkey
1-2 zucchini, sliced in quarters
1/2 large yellow bell pepper, chopped
1/2 cup sliced fresh mushrooms, sliced
2 T minced garlic
1 can diced tomatoes (I use the no salt added)
1 jar of organic tomato/marinara sauce or homemade
1 box of whole wheat penne pasta
Basil
Parsley
Oregano
Sodium free veggie salt
pepper
Instructions:
Pour about 1 T of olive oil in your skillet along with your minced garlic. Saute for about 1-2 min. Add your ground turkey, salt and pepper and cook.
Meanwhile, you can be boiling your water and cooking your pasta.
Once your meat is cooked, add your zucchini, peppers, and tomato sauce. Stir together. Sprinkle your basil, parsley, and oregano. I don't ever measure the spices..sorry!
Turn your heat down to low/med and let the meat, veggies and spices cook in together for a few minutes. Once your zucchini have cooked, mix your can of diced tomatoes, your meat and veggies and pasta together. Transfer to a casserole dish and sprinkle with Parmesan cheese. Cover with foil and bake at 350 for about 8-10 minutes.
(you don't have to make this into a "baked" pasta dish. You can simply serve the meat/veggie sauce over your pasta if you so choose.)
Yummy dish!! Takes very minimal time to prepare and cook!! And tastes great paired with a loaf of roasted garlic bread!!
