Yummy Whole Grain Pancakes


I got this recipe from a friend and it is delicious! My kids love it too! I took my friends advice and made up several batches of just the dry ingredients and placed them in 3 different large zip lock bags. So, now if we want pancakes one morning, all I have to do is empty the dry mix into a bowl and add the liquids! Thanks Kim!




Ingredients:

3/4 cup unbleached flour
1/2 cup whole wheat flour
1/2 oat bran
1/2 cup chopped pecans
1 t baking soda
1/4 t salt
1/4 cup molasses or honey
1 cup boiling water
1 cup fat free vanilla yogurt
2 lrg eggs
1T canola oil
1 cup berries (optional)

* I use 3/4 whole wheat flour and only 1/2 cup of the unbleached. Just switch the two from the original recipe.
*I also add in 2 T wheat germ and 2 T flax seed.
*I use applesauce instead of oil.

Instructions:
Combine the dry ingredients.
Combine the liquids.
Add the two mixes together.
Pour batter by 1/3 cupfuls into skillet.

Makes 12 lrg pancakes! YUMMY!
