Eating From The Pantry

Okay, so a blog that I frequent, www.moneysavingmom.com posted this challenge the other day. She is pregnant with their third child and has had a busy week so she decided that rather than go to grocery store this week, she would challenge herself to make healthy meals from items they already had.
As I was thinking about what to fix for dinner yesterday afternoon, every meal I thought of required me to go to the store....and then I remembered her challenge of Eating From The Pantry! So, off I went, looking through the pantry and checking the fridge!
Here is what I came up with:

Creamy Chicken Noodle Casserole















(sorry the pic is only of half of it, but my family actually loved my creation and it was quickly disappearing!)

Ingredients:

1 bag of whole wheat egg noodles
2 cans of chicken (or tuna)
2 cans of cream of chicken soup
1/2 cup fat free sour cream
1 can salt-free mixed veggies
1 small can of sliced mushrooms
sea salt
veggie pepper/ground black pepper
basil
Smart Balance butter spread (or other low fat spread)
Mozzarella cheese

* cook egg noodles
*mix together 1 can of cream of chicken, sour cream, mushrooms, veggies, chicken and spices.
*add butter and 1 can of cream of chicken to cooked noodles.
*add both veggie mix and noodles together.
*place in a 9x13 casserole dish and sprinkle with cheese. Cover with foil.
*Heat in oven at 350 degrees for about 15 minutes or until hot and the cheese is melted.
Voila!
