Taco Soup

A chilly night + a bowl of taco soup + cornbread= one very satisfied, warm body.

Ingredients:

1 lb of ground turkey meat (you can use more if you like more meat)
2 T minced garlic
1/2 onion chopped
1 can black beans
1 can pinto beans
1 can corn
1 can diced tomatoes (i use "no salt added")
3/4 bottle of V8/vegetable juice
Fresh cilantro, chopped
2-4 T Chili powder or taco seasoning packet
1 t cumin
1 packet of ranch dressing seasoning
sea salt and pepper to taste

Instructions:

Add some olive oil to your skillet. Saute your garlic and onion on med-high heat for just a few minutes, then add your turkey meat. I usually season the meat with a little chili powder, veggie salt and pepper too. Cook until done.

While your meat is cooking, add beans, corn, tomatoes, V8 and seasonings to a large pot. Bring to a boil, then simmer. Add your turkey meat and let simmer for about 20 minutes. You can eat the soup immediately but the longer it simmers, the better flavor it will have as the seasonings are cooked in.

Sprinkle with cheese and serve with either whole wheat cornbread or blue corn tortilla chips- Yummy!
